Just a taste of how we do it…
Velouté is a béchamel made with cream. Bouillabaisse, a fish dish traditionally cooked on the beach by fishermen in the Provence region of France. Croustade consists of a case of puff pastry, hollowed out bread, Duchesse potato mixture, filled with a ragout, vegetable or a puree.
