Our chefs endeavour to source our ingredients as locally as possible and continuously look for options from existing and new suppliers to create interesting menus to be prepared and cooked in-house. We use M&J Seafoods & C&G Neve for our fish, Phil Barton in Soutport for our meats, Sinnet Lawson for our vegetables and fruit. Our ice cream comes from Fortes in Llandudno and Cheshire Farms. Our asparagus comes from Claremount Farm.

Besides the regular daily specials, the menus change every six to eight weeks to maintain interest and to reflect seasonal produce and quality suggestions from the suppliers (click here for examples of previous menus). All the food is prepared on the premises and cooked to order. We use unsalted butter in our cooking and baking, we bake our own bread and marinade the olives in house. See the relevant pages for further notes giving a taste of how we do it.

Many of our dishes are acceptable to diets such as gluten-free and we always have something interesting for vegetarians and some of the dishes can easily be “converted” to a vegetarian option.
